console: rework DisplaySurface handling [vga emu side]

Decouple DisplaySurface allocation & deallocation from DisplayState.
Replace dpy_gfx_resize + dpy_gfx_setdata with a dpy_gfx_replace_surface
function.

This handles the graphic hardware emulation.
