docs: driver-api: gpio: using-gpio.rst: avoid using ReST :doc:`foo` markupgpio-updates-for-v5.14
The :doc:`foo` tag is auto-generated via automarkup.py.
So, use the filename at the sources, instead of :doc:`foo`.
